Finally hit 200 covers solo on a Saturday night

Been at this bistro in Portland for about 8 months now. Last Saturday the ticket machine just kept printing and I looked up and realized I had 200 plates out the door by myself. How do you guys pace yourself on those crazy busy nights without burning out halfway through?

Yeah I feel that so hard. The other night I was in the weeds with like 15 tickets hanging and the printer just kept spitting more out. I had to stop and take a breath cause I could feel my shoulders getting tight and I knew I was gonna crash hard if I didn't pace myself. What helps me is setting little mental goals like getting through the next three tickets before I even look at the rail again.

Used to be one of those people who thought you just had to push through the weeds no matter what... that slowing down meant you were weak or something. But reading stuff like this totally changed my mind. The whole idea of breaking it down into little chunks like three tickets at a time is genius. It's like you're not fighting the whole mountain at once, just taking it one step at a time. I've been doing it the past few shifts and it honestly keeps me from feeling that crushing panic. Doesn't make the rush go away but it makes it way more manageable.
