A thing I saw in a Portland food hall about plating

I was at Pine Street Market in Portland last week and noticed something. Three different stalls were serving their food on these small, dark slate slabs. It looked cool, but I watched a few people try to eat off them. The sauce ran right off the edge and the food slid around. One guy's pork belly just shot off onto the table. It made me think we sometimes pick style over how the guest actually eats. Have you seen this kind of plating cause problems before?

Actually, I'd say it's a pretty big deal when your food flies off the plate.
