A customer's 'no sauce' request taught me a lesson about plating

Last Saturday a guy at the counter asked for his plate completely dry, no sauce no jus nothing. I thought it was a waste since I spend 20 minutes on that reduction, but he ate everything and said it was the best meal he had all month. Has anyone else had a picky order that secretly made you rethink how much you lean on your sauces?
