I finally tried store brand canned tomatoes against the name brand

Made a simple pasta sauce with the cheap store brand from Aldi and the name brand from Kroger side by side. The store brand was thinner and more watery, took an extra 10 minutes to cook down. Any tips for thickening up cheaper canned tomatoes without adding a bunch of sugar?

My first attempts at thickening cheap sauce usually ended up closer to tomato paste with ambitions. A little tomato paste stirred in at the start does the trick without making it sweet. Just don't ask how many times I've accidentally turned sauce into a weird jam.

weird jam" is the perfect way to put it lol. honestly that whole struggle with cheap sauce feels like a metaphor for a lot of stuff in life. we try to fix one thing, add a little more, a little more, and suddenly the whole thing is a different mess. happens with sauce, happens with home projects, happens with relationships too i swear. sometimes the real trick is just knowing when to stop adding stuff.
