The week our freezer died in July changed my whole view on food storage

I run a small diner in Tulsa, Oklahoma. Our main walk-in freezer gave out on a Tuesday during a 103 degree heat wave last summer, and we lost about $2,800 worth of meat and frozen pies before I could get a repair guy out by Friday. That week forced me to hand write orders every morning and buy fresh daily from the local butcher, and honestly the food tasted better and customers noticed. Has anyone else gone through a big equipment failure that actually made their operation better in the long run?

My ice machine broke and I finally cleaned it, best thing ever.

Did you see any mold in the lines when you pulled it apart?
