Pro tip: a gazpacho bar in Seville changed how I see cold soup
Last month I stopped at a little spot near the cathedral that had like 8 different gazpachos, from classic to watermelon mint. I always lumped cold soup with cereal as a 'not real soup' thing, but watching folks build their own bowl with toppings made me rethink. Does adding crunch and garnish make it more of a salad in liquid form, or does it still count as soup? Curious if anyone else has had a food trip that flipped their soup vs cereal line.
What toppings did you actually put on yours, because that seems like the thing that decides the whole soup vs salad question. If people are piling on croutons, cucumber cubes, and hard boiled egg, you're basically eating a salad that happens to sit in tomato juice. Where does the liquid stop being the dish and start being the dressing?
