Learned gazpacho was originally served over bread and now I don't know what to believe
Saw a video about old Spanish recipes last night and they said gazpacho was basically bread, garlic, olive oil, and vinegar pounded together, not the tomato soup thing we all think. Tomatoes weren't even in Europe until later. That blew my mind. So if cereal can be soggy bread in milk, and gazpacho is bread in liquid, where's the line? I feel like the whole cold soup category just shifted under my feet. Has anyone else had a food history fact mess with their soup classification system?
