Why does nobody talk about how long it takes to get a health permit sorted?

In my experience opening a spot in Glendale, the inspector flagged our hand sink for being two inches too far from the coffee machine, which started a whole new plan review. That single issue added about three months to our opening date because of permit revisions and re-inspection waits. Has anyone else faced a tiny code thing that blew up their timeline?

Forget the actual safety stuff sometimes. The real cost is the mental energy drain on the owner, which can kill a business faster than the fine. Seen too many good people just give up.

My friend's food truck got held up because the inspector said the paper towel dispenser was mounted six inches too high. They had to order a whole new bracket and wait for a follow up visit.
