That local roaster told me to store beans in the freezer, now I get why he was wrong

He said it keeps them fresh, but after 2 weeks my espresso shots were flat and sour, anyone else find freezer storage kills the crema?

Oh man, I made that same mistake last year and my shots tasted like someone vacuumed an attic and brewed it. @sandra_anderson2 nailed it though, I switched to a dark cabinet and my crema actually shows up now instead of running away like I owe it money. Guess I'll stick to freezing my leftover pizza instead of my beans.

Oh man, the leftover pizza thing is way safer. I actually did the freezer thing for like two weeks thinking I was being smart, and my morning coffee turned into this sad, flat liquid that tasted like it had given up on life. I switched to a dark cabinet too and it was night and day difference. My beans last about two weeks max, any longer and I'm back to that flavorless rock situation. Also don't store them in the fridge either, learned that one the hard way when they picked up onion smell from the leftovers and my coffee tasted like someone blended a salad into it.

Wait, did he also tell you to store your milk in the microwave? Because that's about the same level of bad advice. Freezer kills the oils and moisture right out of the beans, turns them into little flavorless rocks. I tried it once for a month and ended up with coffee that tasted like old cardboard soaked in sadness. Honestly, just keep them in a dark cabinet and use them within a couple weeks, your shots will thank you.
