Realized our pastry case was losing us money because of one dumb placement rule
I noticed croissants were flying but muffins sat all day, so I moved the muffins to the top shelf by the register and sales went up like 30% in a week at our spot in Koreatown. Turns out people grab what's right in their face when they're paying, not what looks nice in a grid. Anyone else mess with their case layout and see a jump like that, or did I just get lucky?
