I finally stopped offering chocolate croissants and switched to ham and cheese
I used to make both at my cafe in Pasadena but the chocolate ones would sit around for 3 days before I had to trash them. The ham and cheese sell out by noon every day even though they take longer to prep. Has anyone else had to cut a popular looking item because it just didn't move?

Wait but maybe the chocolate croissants just needed better placement or a sign saying they're fresh because sometimes people assume they're just average. I've seen places where the sweet stuff actually gets people in the door for coffee and then they grab a savory one too. Idk, maybe it's just me but I'd be bummed if my go-to chocolate fix disappeared without trying a few more weeks of marketing them differently.

Ugh, that would be such a bummer. I'm right there with you, it feels like they gave up too fast without really trying to make them work. A little sign or moving them to the front counter could have made all the difference, people are visual and they need that nudge sometimes. I've seen bakeries where the chocolate ones sell like crazy once they're positioned right, so it's weird they didn't experiment a bit more. Really hope they don't pull them forever, that's a sad thought for your morning coffee run.
