I finally figured out why my espresso tasted off for 4 months at my shop in Pasadena
For 4 months I kept blaming my beans, my grinder, and even my water filter because shots tasted sour no matter what I did. Turns out the real culprit was my burr alignment being off by a tiny amount after I dropped the hopper lid on the counter back in January, and it took a $70 alignment tool and about 20 minutes to fix what I'd been chasing for a third of a year.
