That food truck in Austin with the $15 brisket taco changed my mind about buying fancy cookware

I was down in Austin last weekend and stopped by this spot called Micklethwait Craft Meats on Rosewood Ave. Their brisket taco was SO good that I asked the guy how he does it, and he said he uses a beat up $40 smoker from 1998 and a cheap cast iron skillet. Made me realize I've been spending hundreds on All-Clad when the real secret is just technique and good heat control. Has anyone else had their eyes opened by a random street vendor or food truck?

Preach. That's all it takes is a hot fire and knowing what you're doing.

Question whether @vera308's really been burned by bad cookware though.

Oh come on, that's a bit harsh man. Even good cooks can get burned if a pan handle gets loose or a lid explodes from steam pressure. I've seen friends with legit skills still end up in the ER from random cookware failures.
