Walked into a butcher shop in Little Italy and saw them trimming ribeyes with a bandsaw

Last Saturday I stopped by this place called Giovanni's Meats on Mulberry Street to grab a few steaks for a cookout. The guy behind the counter was using a bandsaw to trim the fat caps off ribeyes instead of a knife. I stood there watching for like 10 minutes because I've never seen anyone do that outside of a processing plant. Has anyone else run into butchers using power tools on the retail side? I feel like that's gotta mess with the texture of the meat.

A bandsaw for trimming? That's just insane.

Insane" is a strong word. My uncle once used a hatchet for trimming his bonsai trees. It didn't go well for the trees, or his thumb. But hey, whatever gets the job done.
