Update: My shop in Tacoma started carrying bison three years ago and now it's 15% of our weekly sales.

Last month a regular told me he switched from beef entirely because the flavor is 'cleaner'. Anyone else seeing this kind of shift with their customers?

That cleaner flavor might be from the lack of growth hormones in bison.

Growth hormones are banned in all beef cattle anyway. The flavor difference comes from bison being leaner and grass finished most of the time. That changes the fat content and what's in the fat. It's a diet and breed thing, not a hormone thing.
