TIL the butcher block counter at a spot in Providence was taller than my bench by 3 inches
Stopped in for lunch and noticed the prep table was built for a shorter crew, so every cut they make starts from a different angle than mine and you can see it in the trim.
Three inches is a wild difference. That's not a small gap, that's a whole different way of standing at the board all day. The trim thing really gets me though, because that means the blade angle shifts every single time they push through a cut. You'd never catch it on the plate but the edges tell the whole story. Makes you wonder if they even know, or if it's just how it's always been there. Guys working on a table that height must have some sore shoulders by close.
