TIL a bad week with a half-ton of pork belly taught me to trust my gut
Last Tuesday I got a delivery of fifty slabs of pork belly for our bacon program and they just felt... off. The fat cap was too thin on about half of them and the color looked dull compared to what I'm used to from my regular supplier. I almost started trimming them anyway but stopped after the third slab and called the distributor to complain. Turns out they sent me a batch from a different farm that had been flash-frozen then thawed. Now I'm kicking myself for nearly wasting half a day's work. Has anyone else had a supplier swap product on you without saying anything?

Oh man, that really sucks. I've had a similar thing happen with chicken thighs once (my regular guy sent me a pallet from a different supplier without telling me) and I felt so stupid for not catching it sooner. The texture was all wrong and they cooked up tough and dry, totally ruined a big catering order I had lined up. It's hard because you want to trust your partners, you know, but when something feels off you gotta stop and check before you waste all that time and product. Good on you for calling them out and not just pushing through it like I almost did.

Yeah that catering order story really hit home, I've been there with bad produce before too.

Yeah always check the date codes on boxes before you even accept delivery.
