The $300 carcass saw vs. my old hand saw, one month later
Bought a cheap electric carcass saw for a big lamb order last month, but kept going back to my hand saw for the smaller cuts. The electric one is faster on the big stuff, but the hand saw gives me way better control on ribs, thinking about selling it.

Did you ever find the hand saw just feels more natural on the smaller work, even when the electric one should be quicker? I used to think electric was always the way to go, but after messing around with both on pork ribs, I get exactly what you mean about control. If you're mostly doing big cuts, keep it, but for anything detailed, that hand saw is hard to beat, in my experience.
