Knocked a full primal off the rail on a Friday rush
I was breaking down a whole beef loin last week in the back of the shop, moving fast because we had 3 catering orders due by 2 PM. My knife slipped on a wet patch of fat and I bumped the rail, sending a 30 pound primal crashing onto the floor. Spent 15 minutes trimming off all the dirty bits and lost a good 4 pounds of meat. Anybody else ever have their whole day go sideways from one stupid slip like that?

I get that it stings losing product and time, but honestly that sounds like a pretty good outcome for knocking a whole primal off the rail. You trimmed off 4 pounds and still had most of it usable. I've seen guys have to toss the whole thing because it landed in a mop bucket or under a drain. Fifteen minutes of cleanup on a bad slip is a win in my book.

Man, I've been there too! I started keeping a spray bottle of water and a bench scraper right by my station (corner of the cutting board works great) so I can catch a slipping primal before it goes over the edge.
