I used to hate sharpening by hand until I tried a wet stone in Portland

For years I only used an electric sharpener because I thought hand sharpening took too long. Then my mentor at the shop in Portland made me try a 1000/6000 grit wet stone on an old boning knife. After just 3 knives over one afternoon, I could feel the difference in edge retention and smoothness. Has anyone else switched from electric to hand sharpening and noticed a big change?
