Honestly, just read a USDA report that said nearly 30% of foodborne illness outbreaks linked to meat are tied to improper storage temps at retail. Found it while looking up something else.

Check the report, @lindamartin, it counts confirmed outbreaks, not single degrees.

Seems like a high number but how many outbreaks are we actually talking about? The report might be counting every single case where temps were off by a degree. Most fridges have a safe buffer built in anyway.

That buffer isn't for ignoring the rules, it's for safety. A degree or two over time lets bacteria grow fast. The number seems high because this is a major weak point. People get sick from this exact thing all the time. It's not a minor paperwork error, it's a real risk.
