Found out from an old meat cutter that we used to break down whole hanging halves by hand at Swift in the 60s
He told me a two man crew could do 60 head a shift back then with just a hook and a knife, no saws on the floor. Made me wonder how many of you still break whole primals down old school versus reaching for the bandsaw first.
My grandpa would've laughed at me for this one. I've got a whole setup at home and still grab the bandsaw for anything bigger than a pork butt. Tried breaking down a whole beef clod by hand once and my arms were shot by lunch, plus my cuts looked like a crime scene. The old timers made it look easy because they did it every single day for years, not because they had some secret trick. Us weekend warriors act tough until the third primal shows up and suddenly that saw looks real friendly.
