Butcher shop owner told me I was trimming fat wrong for 12 years
Had a chat with old man Sal at his shop in Newark last Tuesday. He watched me cut a strip loin and said I was leaving too much fat cap on the eye end. Said I was costing myself about 4 bucks a pound in yield every time. He showed me his method where you angle the knife differently and cut with the grain of the fat instead of against it. Tried it on my next 3 loins and pulled an extra half pound of trim per piece. You guys ever have someone point out a basic move you've been messing up for years?

@miles946 nailed it. this is just him trying to upsell you on his trimming style so you buy more fat from him. 12 years of doing it your way and suddenly his way saves you four bucks? sounds like a sales pitch.
