Broke 500 pounds of beef cut in one shift today
Been at this shop for 7 months now, never thought I'd hit that number. My mentor just nodded and said 'good pace kid' - felt like winning the world series.

Honestly @caleb_thomas93, did that include boning and trimming or was it just straight muscle meat coming off the line? 500 pounds in 8 hours is like 62-63 pounds an hour, which is doable if you're just breaking down primals but not if you're also dealing with a bunch of fat and silverskin. Was this a whole muscle job or did you have to portion out specific cuts too? Curious how you handled the waste ratio on that.

500 pounds of beef in 8 hours? That's like a quarter of a cow (maybe a third) if you're counting bone-in weight. But the_joseph's math is right, 62 pounds an hour is a solid pace if you're just breaking down primals. If you had to stop and sharpen your knife every 20 minutes (which I always do, dull blades drive me crazy), you'd be lucky to hit 50 pounds an hour. Also, waste ratio - if it was all muscle meat with no fat or silverskin, that's basically cheating. Like saying you ran a marathon but you only did the last mile.
