A customer's question about lamb neck taught me something

Last Saturday a woman asked me to debone lamb neck for a stew and I had to admit I'd never even cut one before, so I spent 20 minutes watching videos on my phone in the back room and now I'm wondering how many other common cuts I've been overlooking from pure habit, has anyone else had a request that exposed a gap in their training?
