That one Tuesday where eggs hit $6 a dozen and I still ate for $15

Walked into the grocery store in Columbus last month and nearly choked at the egg shelf. Prices went insane overnight. So I grabbed a bag of frozen veggies, a sack of potatoes, and a can of black beans instead. Made a giant skillet hash with paprika and hot sauce, stretched it across 3 meals for like $4.50 total. The trick was roasting the potatoes first so they got crispy, then mixing in the beans and veggies. Honestly tasted better than my usual egg scramble. Anyone else got a go-to swap when a staple price spikes?

...and honestly I keep seeing these posts blowing up about egg prices and yeah it sucks but its just eggs. Like you can swap them for anything and still eat fine. The whole panic over food prices feels kinda overblown sometimes. Frozen veggies and beans have been cheap forever, thats not new. Plus potatoes are basically the most reliable food on the planet. I mean congrats on the hash and all, that sounds decent, but acting like we gotta reinvent the wheel every time one item goes up a couple bucks is a bit dramatic. Eggs will come back down eventually, they always do.

wait so are you actually swapping eggs in baking or just for breakfast stuff cause baking is where eggs are kinda hard to replace and everything gets weird texture wise. I get that beans and potatoes are cheap but they dont do the same job in a cake or even a decent omelette. Like the price thing is annoying for people who actually rely on them daily not just as an occasional topping.
