Store brand tomato paste changed my spaghetti sauce game last week

I always figured store brand tomato paste was the same as name brand, so I never bothered. Then I read a blog post from a food scientist that broke down how some cheaper brands use under-ripe tomatoes and more citric acid. That explained why my sauce always tasted a bit sour even after cooking it for an hour. I swapped to a mid-priced can from Aldi and the difference was huge. Has anyone else noticed a big gap with canned tomato products?

Used to swear by the cheap store brand, figured it was all the same. @the_margaret that sour thing is exactly what I was dealing with, never could figure out why until now. Switched to a better can and it's a whole different ballgame.
