Oh please, @nathannelson, calling it 'meal prep' makes it sound fancy. It's just throwing wilting veggies and a sad chicken carcass into a pot so you don't have to eat instant noodles on Thursday. My 'hassle' is watching a pot boil for an hour while I scroll on my phone. Big difference from dropping forty bucks on some takeout soup in a tiny container.
