My aunt in Toledo changed how I look at meatless meals
She told me her family does two no-meat dinners a week, not for health or anything, but because a 2 pound bag of beans costs $2.50 and feeds all five of them. I always thought cheap meals meant cutting corners, but she showed me her lentil soup recipe that costs under $5 for the whole pot. It made me realize I never actually priced out beans versus the chicken I buy on sale. Has anyone else found that swapping one protein night a week actually cut their grocery bill more than couponing did?
Wow, hold on though, dried beans are way cheaper than that even. I get a 2 pound bag for around $2 at Walmart and that's like 12 servings once they're cooked, so her $2.50 is already a good deal but you can do better. The lentil soup thing is real though, that pot will feed you for days and cost less than one pack of chicken.
