Bought a whole chicken for $6 at Aldi last week and made 4 meals out of it
Roasted it on Sunday, used leftovers for tacos Monday, made soup Tuesday, and threw the last bits into a stir fry Wednesday. Has anyone else stretched a single chicken like this or am I just cheap?

lol that's not cheap, that's smart! I did the same thing last month, roasted a chicken and turned it into like 5 meals including a casserole. It's honestly the best feeling when you kill a whole bird like that

Read somewhere that one good roast chicken can feed you for a week if you plan it right. You really stretched that bird, that's impressive.

Man, I have to disagree. I did this twice and got sick of chicken by day three. The meat gets dry and sad after the first reheat. Tacos were fine but the soup was bland and the stir fry just tasted like leftovers pretending to be new. For $6 I'd rather just buy a rotisserie from Costco and skip the whole week of eating the same bird. You're not cheap, you're just making yourself eat chicken every single day.
