Called my buddy crazy for spending $200 on a sous-vide cooker. Now I own 3 of them.
So about 8 months ago my friend Mike showed up with this Anova sous-vide and started making steaks in a plastic bag in a cooler. I laughed at him for like 20 minutes straight, told him it was a waste of money and water. Then he handed me a slice of ribeye that was literally the most tender piece of meat I've ever eaten. I didn't say anything but I went home that night and ordered the same model. Now I use it for chicken breasts that come out juicy every time, even eggs for breakfast. I even convinced my dad to buy one for his fishing trips to keep fish at the perfect temp in the cooler. Has anyone else flipped on something they swore they'd never try? What was the moment that got you?

The moment that got me was a cheap Ikea skillet. I used to swear by non-stick pans, thought cast iron was just for hipsters who liked heavy cookware. But I burned through non-stick pans every six months, getting frustrated with scratched surfaces. Picked up a cast iron for 15 bucks at a yard sale, seasoned it badly but it still worked. Now I've got 4 different sizes and I use them for everything from searing steaks to baking cornbread.

My buddy swore he'd never buy an air fryer because he thought it was just a tiny convection oven with a dumb name. Then his wife brought one home and he made wings that beat anything from his actual oven by a mile. Now he uses it almost every single day and even takes it camping with him.

Used to think cast iron was too much trouble, but now I won't cook a steak any other way.
