Watched a guy wrap his whole brisket in foil at hour 2 at a cookoff in Waco, and the judges caught it
Three weeks ago I was at a small backyard comp outside Waco and the guy two spots over from me foiled his packer at the 2 hour mark, which nobody does unless they are trying to hide something. Turns out he was running his stick burner way too hot, like 350 plus, and the foil was his fix to keep the flat from drying out. Judges walked the pits around hour 5, saw the foil seam, and he got docked points for it. He still placed 14th out of 22, so it was not a total disaster, but he was mad the rest of the day. You cannot rush a brisket and you sure cannot hide a temp problem with foil and hope nobody looks. Has anyone here ever seen a team pull foil mid cook like that and still score decent?
