Took me 8 years to figure out I was putting my brisket on the smoker cold from the fridge

...and it STILL took me another year after someone told me before I actually remembered to do it! I was the same way with pork shoulder, straight from the cold fridge every single time. My brother in law came over one time and saw me doing it and he just laughed. Said I was basically shocking the meat and making it take way longer to cook. Now I set a timer on my phone for 45 minutes before I even think about lighting the smoker. But yeah, when I'm in a hurry I definitely still catch myself almost throwing it on cold. It's one of those things that seems so obvious once you know, but nobody tells you upfront.

Wait, you're telling me you didn't know that either? I spent like five years doing the exact same thing with my pulled pork. I thought letting it sit out on the counter was some kind of food safety nightmare, so I'd just throw it on straight from the fridge. Then one day my buddy who actually knows what he's doing saw me do it and just shook his head. He told me to let it sit out for like 45 minutes before it hits the smoker. Honestly, I still forget half the time when I'm rushing to get it started.
