Talked to a 70 year old pitmaster at a gas station in Kansas
I was grabbing ice for my cooler and this old guy saw my ribs in the back of my truck. He told me I was wrapping them way too early and offered to show me his method over a cup of coffee. Anyone else ever get schooled by a random stranger who turned out to be right?

I ran into an old guy at a rest stop in Texas who saw me salting a brisket and told me I was using too much salt. He walked me through his rub recipe right there by the picnic tables, and honestly his brisket was the best I ever tasted. I still use his salt ratio to this day and it made a huge difference in my cooks.

I heard someone say salt is the one thing you can't really overdo on beef.

Tbh, the "you're doing it wrong" energy from random old guys at gas stations is exhausting. I had a guy in Oklahoma tell me I was ruining my pork shoulder by not adding brown sugar at the start, and I was like, okay thanks, but my family already ate it and liked it. It's just food, not a life or death competition. I get that experience matters but pumping up BBQ like it's rocket science is a bit much.
