Ran into a pitmaster at a gas station outside of Austin last year

He saw my smoker in the truck bed and said, 'The secret's in the rest, not the rush.' What's the best piece of advice you've ever gotten from another cook?

Honestly, I get where that pitmaster is coming from, but I've always seen it the other way. The real secret is in the prep, not the rest. If your trim is sloppy or your rub is uneven, no amount of resting will fix it. I've seen guys fuss over rest times while serving ribs with silver skin still on. Getting the basics perfect before the meat even hits the heat makes the biggest difference.

Oh man, you're totally right. I watched a guy at a cook-off spend an hour on his rest, but he didn't clean his grill grates first. The whole batch tasted like last week's burnt sausage. That prep work is everything.

Ugh that's so true. It's like when people try to fix a bad haircut with tons of product instead of just getting a good cut first.
