My uncle told me his brisket method is basically just a prayer and a guess

We were at his place in Austin and he was showing me his offset smoker. He said he never uses a probe thermometer, just goes by the bark color and how the meat feels when he pokes it. I asked about his rest time and he just shrugged and said 'until it feels right, maybe two hours, maybe four.' It hit different because I've been so stuck on hitting exact temps and times from YouTube videos. Has anyone else had a moment where they realized they were overcomplicating their cook?

Watched my buddy stress over a pork shoulder for hours, checking his phone every five minutes. He finally gave up and just left it alone, came back hours later, and it was perfect. Makes you wonder why we get so wound up about it, right?

Checking his phone every five minutes" is the real problem lol. You just gotta trust the process and leave it alone. The meat knows what it's doing better than we do.
