Just realized my old offset smoker nearly caused a fire last week
I was running it in my driveway in Denver, and the grease drain from the firebox had gotten completely clogged with old ash and fat. It overflowed onto the hot coals below, and I had a two-foot flare-up before I could smother it. Anyone else have a good method for keeping those channels clear on a classic offset?

My neighbor's deck got scorched from a similar clog. He uses a bent coat hanger to poke through the drain after every cook now.

It's wild how many problems start with not doing the tiny, boring maintenance tasks.
