Just had my mind changed about smoking with charcoal after a gas grill life

I've always been a gas grill loyalist, thinking charcoal was too much hassle for not enough payoff. But after borrowing my neighbor's offset smoker and tasting the deep, smoky flavor in the brisket, I'm totally converted! What was the one experience that made you switch up your BBQ game for good?

Man, that first real charcoal flavor is a total game changer, isn't it? For me it was a cheap kettle grill and some steaks, where the dripping juices hit the coals and sent up that insane aroma. That was the moment my gas grill started collecting dust in the corner. The hassle is absolutely worth it for that kind of flavor you just can't fake. Been a charcoal and wood devotee ever since that day.

Once you get that crust right (it's all about the bark, honestly), you'll never go back. Keep the smoke thin and blue for the best results, and don't peek too often.
