Hit 500 briskets cooked on my offset smoker last Sunday... never thought I would get there
I was just pulling a brisket off for a backyard party and my buddy asked how many I had done total. I started counting in my head... all the way back to my first one in 2018 that came out like a leather shoe. Somehow I got to 500 exactly, which blew my mind because I don't even work in a restaurant or nothing. Has anyone else kept track of their total cooks and hit a weird milestone like that?

@hannahs45 brings up a good point that first brisket taste test is a rite of passage. My first one was so dry I used it to make dog food and my dog still gave me side eye. Hit 300 briskets last fall and realized I had been tracking them all along in a beat up spiral notebook. It felt weirdly good to see that number, like proof I didn't just mess up that many times for nothing.
