Hit 100 briskets smoked on my offset last Sunday
I marked my 100th brisket last weekend with a 15 pound prime packer from Costco. The bark came out perfect but I pulled it at 198 instead of 203 by accident. Anyone else keep a tally or just go by feel?

Honestly my buddy pulled one at 195 and it still turned out incredible.

My friend pulled his at 192 and it was the best brisket I've ever had from him... we were all sitting around the table just staring at how juicy it was. He was sweating bullets when he took it off because he thought he messed up the timing. I told him sometimes going lower and slower is just the magic ticket if the meat feels right. That 195 area seems to catch people off guard but it works out more often than you'd think.

My neighbor once left his on until 203 and it fell apart like pulled pork.
