Drove 3 hours to Franklin BBQ in Austin and finally get the hype
I waited in line at 9am on a Tuesday and still didn't get my brisket until 1pm. Aaron Franklin's crew works that pit like a science experiment, rotating each log every 20 minutes. The bark on that brisket was dark as coffee and cracked when I bit into it. Has anyone else made the pilgrimage and thought the wait was actually worth it?

The 9am to 1pm wait is exactly why I don't get the hype. I went on a random Wednesday last fall and stood in that line for over four hours. The brisket was good, sure, but I've had better from a random trailer in Lockhart with no line and half the price. The bark was fine but it was still just beef at the end of the day. I can't wrap my head around burning a whole morning for lunch like it's some kind of achievement.

Wow, a random Wednesday? I thought you were gonna say a Saturday or something. Four hours on a random weekday is honestly kind of insane. That's a level of dedication I just can't wrap my head around for brisket, even good brisket.
