Those cheap silicone baking mats melted on my brand new cookie sheet

I spent $8 on a set of silicone baking mats from a discount store and they warped and melted onto my $30 Nordic Ware pan at 375 degrees. Has anyone found a mat that actually holds up to regular use without ruining your bakeware?

375 degrees melted them? That's wild, I've had cheap ones get sticky but never full meltdown mode. I agree with @the_zara though, the platinum silicone is the real deal, my Silpat has survived countless 425 degree cookies without any warping. Just make sure you get the thicker kind from a real bakeware brand, not the super thin ones from a dollar bin.

Ugh, I feel your pain... I had a similar thing happen with a cheap mat and it just bonded to my pan, had to throw the whole thing out. The trick is you gotta spend a little more for ones that are actually made with liquid silicone, not some cheap blend. Look for mats that say they're "platinum silicone" and can handle up to 500 degrees, that's what I switched to. I got a set from Silpat and they've been through hundreds of bakes with no issues, just don't cut on them with a knife or they'll get those little cuts. Also, stay away from any that are super thin and floppy, you want a mat that feels sturdy and has some weight to it.

Read somewhere that the cheap ones are often made with silicone mixed with fillers, and those fillers break down at lower temps. That's why they turn sticky or warp. The good mats don't have any of that extra stuff in them, they're just pure silicone. They do cost more up front but in the long run it's way cheaper than replacing your pans.
