That $4 bag of bread flour made better cookies than my usual expensive stuff

I've been using this fancy organic all-purpose flour for years and my cookies always spread into flat puddles. Last week the store was out so I grabbed a cheap bag of bread flour on a whim. First batch came out thick and chewy with that perfect crinkle top. I even used the exact same recipe just swapped the flour. Anyone else find that bread flour totally changed their cookie game?

That's exactly what happened with my pancakes once! Grabbed a random store brand flour instead of my usual and suddenly they were all fluffy and tall instead of thin and sad. Now I just grab whatever's cheapest for everything and it's been fine.

Right? Same thing happened to me with chocolate chip cookies. Bought some generic baking soda because I was out and my cookies came out way better than normal, all crispy on the edges and soft in the middle. Now I just grab the cheapest brand of everything too and honestly my baking has never been more consistent.
