PSA: The bakery section at the new Whole Foods in Burbank is a goldmine for learning

I went there last week and spent a solid 20 minutes just looking at the sourdough loaves. They had one called 'Central Milling Type 85' that was so perfectly scored, but right next to it was a ciabatta that looked totally deflated and dense. It was like a side-by-side display of a win and a fail. Has anyone else seen a real-world example of a bake that just clearly went wrong in a professional setting?
