My mom mentioned she never measures vanilla, and it made me realize something
I was helping her bake cookies last weekend, and she just poured vanilla extract straight from the bottle. She said she's done it for 40 years and they always taste right. I've been so stressed about hitting the exact 1 teaspoon mark in every recipe, but her batch turned out perfect. Maybe I've been overthinking the small stuff. Has anyone else had a moment where a simple trick from someone else changed how you bake?

Once you understand the basic idea of what something is supposed to do in a dish, you can start trusting yourself. Salt is for bringing out flavor, fat carries taste, acid brightens things up. When you get that foundation, the measurements start feeling like suggestions. It's honestly liberating to just go by feel and eye after that.
