My bread kept sinking in the middle for weeks until I saw someone's routine
I spent almost a month baking sourdough loaves that looked perfect until they cooled and caved in the center like a sinkhole. Turns out I was slashing my scores way too shallow and not letting the steam release proper during the first 20 minutes in the oven. Has anyone else had their loaf collapse after a great oven spring and figured out it was a scoring depth thing?

Oh man I feel your pain, I once scored a loaf so shallow it looked like I was just tickling the dough and it collapsed harder than my dating life in 2015.

Bet it's your pan placement too low in the oven, that temp drop got mine every time.
