My aunt said to chill my cookie dough for 24 hours, I thought she was being dramatic
My aunt Brenda has been baking for like 35 years and she told me at Thanksgiving that the secret to her cookies is resting the dough in the fridge for a full day before baking. I smiled and nodded but in my head I figured it was one of those old wives tales people pass around. Well, two Saturdays ago I finally tried it with my usual chocolate chip recipe, same butter, same chips, same everything, just wrapped the bowl and stuck it in the back of the fridge until Sunday afternoon. The dough came out way firmer and easier to scoop, and the cookies spread less and had this chewier middle that I never got before. My husband ate four before dinner and asked what I did different, which he never does. Only thing I'd change is the wait time kills me, especially when I want cookies right now. Has anyone tried going longer than 24 hours, or is that pushing it?
