I was so wrong about using old bread for French toast
My friend kept insisting stale sourdough makes better French toast than fresh brioche, and I thought she was nuts... After trying it yesterday with a 3 day old loaf from the bakery, the texture was way better and it soaked up the egg mix perfectly without falling apart. Has anyone else had a baking win from something they were totally skeptical about?

Dude my French toast used to be a total soggy mess every single time. I was the queen of mushy bread disaster. Then my neighbor told me to literally leave the bread out on the counter overnight and I was like yeah right lady. Tried it with an old loaf of French bread and it was like a whole different breakfast. The custard actually stayed in the bread instead of making a puddle on the plate. I felt like such a fool for all those years of fighting with fresh bread.

Well it's actually called "staling" not just drying out.
