I had to pick between a stand mixer and a hand mixer for my grandma's cookie recipe.

I went with the hand mixer for that old school feel, and the batter came out perfectly smooth, just like I remember from her kitchen in 1998.

Honestly a stand mixer would have been way better for that kind of dough. The hand mixer can overheat and struggle with thick cookie batter, especially if you double the recipe. You get more consistent power and hands-free mixing with a stand mixer, which actually helps keep the texture perfect.

Grandma's cookie recipes often have a secret ingredient, and it's the way you mix them. The rhythm of a hand mixer lets you feel the dough change, which is something a stand mixer just can't teach your hands. You get a better sense for when to stop, before you overwork the flour and make the cookies tough. That physical connection is part of the recipe too.

The temperature of your hands also transfers to the dough in a way a machine never could.
