Cream cheese versus mascarpone in my tiramisu last Saturday
I had to pick between cream cheese and mascarpone for a tiramisu I made for a party last Saturday. I went with mascarpone because the recipe called for it, but it cost $8 for a small tub at my local grocery store. The layers came out really smooth and rich, but I'm wondering if anyone has tried cream cheese as a cheaper swap and how it turned out for you?

Oh man, $8 for a tiny tub of mascarpone is a total rip-off. I've been there. Honestly I tried cream cheese once when I was broke and the texture was way off. It made the tiramisu feel a bit too dense and almost like a cheesecake filling instead of that light creamy layer you want. So yeah you made the right call but your wallet probably still hates you for it.

I get what you mean about the cream cheese substitute though, it's like trying to make a souffle with playdough instead of eggs.
